A LETTER FROM THE CURATOR
Sit at Japan’s table.
What I prepare is a relationship. With the table, with the cook’s gestures, with what comes from land and sea, with the time each moment needs — and with the hospitality that supports it all, often before you notice you are being cared for.
Gastronomy is my guiding thread. Through it I lead you to neighbourhoods, landscapes, producers, houses and crafts. Through it Japan explains how it welcomes, produces, transforms and shares.
Tokyo, Yamanashi and Fuji, Osaka and Kyoto are chapters of the same reading: city and territory, tradition and contemporary life, precision and spontaneity, silence and intensity.
Some encounters need an appointed hour. Others ask for a pause, a walk, a choice of your own — or simply time. I prepare both with equal care: what I bring close to you, and the space I leave open.
My challenge is to help you see what you might find difficult to notice alone. At the end of ten days, I hope what remains is the feeling of friends gathered around a table.
